Grilled Zucchini Hummus Wrap
Personally one of my favorites and super easy to make! I have also used this recipe to make a little veggie pizza! I just stick it in the over on 360 for 10-15 minutes, basically until the tortilla is crispy and veggies are cooked! Back to the wrap… like I said one of my favorites and I cook it all the time for dinner because it is just so easy and healthy. It does not require a lot of ingredients and you can make two at the same time so you already have your lunch prepped and ready to go for the next day!
Smashed Chickpea & Avocado Salad Sandwich

Literally can not go wrong with any avocado (in my opinion) I could eat them all day everyday. This take on a salad sandwich is so clever and super healthy.. not to mention super vegan 🙂 The best thing about this is you can make a whole bowl of the chickpea and avocado salad and scoop it out when needed! Now that is a quick and easy meal prep. I love to make these for me and my friends on a nice summer day- its a light lunch that keeps you full!
Roasted Honey Garlic Cauliflower

I have recently fallen in love with cauliflower but this takes the trophy for the best recipe I have made so far. I am all about the cauliflower rice and pizza crust so when I came across this I had to try it out. This is an amazing alternative to my late night weekend Chinese cravings. In less than 30 minutes you could be shoving your face with this mouth watering honey garlic cauliflower, add some rice and you are all set! I like to keep this dish in my back pocket to impress friends, relatives and guests!
